Summer is for scones; it is the law (or at least it should be) that you eat at least one serving in June. If you use vegan margarine and plant milk, then they are vegan too – and you get the same excellent baking result. Always serve with cream and jam – I won’t dictate which goes first but it is the jam obviously…

Ingredients

225g/8 oz self-raising flour
1 teaspoon baking powder
50g/1 ¾ oz margarine (vegan or softened butter)
25g/0.8 oz sugar
7 tablespoons milk (any kind)
Milk to glaze

Method

Preheat the oven to 220C/425F/Gas 7. Grease a baking sheet.

This is an easy all in one recipe, mix all the ingredients together to form a dough. I do this in the food mixer with the paddle attachment.

Turn the dough onto a lightly floured surface, knead very gently until the dough comes together. Don’t over work it.

Roll out to a thickness of about ¾ inch. Don’t roll too thinly otherwise the scones won’t rise enough.

Cut into rounds. Knead the trimmings together and roll out again to cut the rest.

Place on the baking sheet and brush the tops with milk.

Bake for 12-15 minutes until golden brown.

You will get about 8 scones from this recipe, depending on the size of cutter you use.

Options:

Add in a handful of sultanas.

Add in a handful of chopped chocolate (plain, milk or white).

Mix in a teaspoon of ground cinnamon.

Add in a teaspoon of mixed spice.

Add the zest of one orange, lemon or lime.
